Chicken liver is the most sought after meat. It is most popularly used in a mixture of ground meat and fat minced into a paste. It is a very rich source of iron. Because of the high content of vitamin A present in it, it is very beneficial for the eyes and helps cure anemia. It is low in fat and very high in vitamins and minerals. It is slightly higher in cholesterol and so is not advised for someone who is watching their cholesterol levels. It is very rich in proteins as well.
One serving of chicken liver provides 100% of the daily recommended intake of riboflavin, a type of B vitamin. Organ meat is generally considered the healthiest. Its consumption is often avoided as organ meat does not look good to many people. Off late many innovative recipes to cook chicken liver have been circulating and its consumption has increased considerably. It is considered to be a delicacy.
